Wheat-free Cheesecake

Wheat free Cheese Cake
this cheescake has no wheat flour in it, but it is good.

Wheat-free Cheesecake

2 - 3 cups of Cocoa Puffs Cereal, placed in a plastic bag and crushed with a rolling pin, or crushed with food processor
3/4 stick of butter or margarine, melted in microwave
Heath Toffee Bit
4 packages Philadelphia cream cheese [8 oz each], softened
1 cup granulated sugar
2 Tablespoons Corn starch  [instead of flour]
1 teaspoon lemon juice
4 eggs, separated
1 Tablespoon Cream of Tartar
1 Tablespoon granulated sugar
crust;





  • add about 3/4 stick melted butter, coat cocoa puffs and press all over bottom of dish
    sprinkle liberally with Heath Toffee bits











  • put all of the cream cheese and sugar, corn starch, egg yolks and lemon juice into mixing bowl, blend well.








  • place egg whites , cream of tartar and Tbsp. sugar into deep bowl, whip until soft to firm peaks form.

    spoon whites over cheese mixture, gently fold together to incorporate well.

    pour all over crust in baking dish or [spring form pan if you choose].
    Top with more Heath Toffee bits. Bake at 350 degrees F for about 45 - 50 minutes, until knife inserted in center comes out clean.

    Cool completely and chill before serving.
