Wheat-free Cheesecake

Wheat free Cheese Cake
this cheescake has no wheat flour in it, but it is good.

Wheat-free Cheesecake

2 - 3 cups of Cocoa Puffs Cereal, placed in a plastic bag and crushed with a rolling pin, or crushed with food processor
3/4 stick of butter or margarine, melted in microwave
Heath Toffee Bit
4 packages Philadelphia cream cheese [8 oz each], softened
1 cup granulated sugar
2 Tablespoons Corn starch  [instead of flour]
1 teaspoon lemon juice
4 eggs, separated
1 Tablespoon Cream of Tartar
1 Tablespoon granulated sugar
crust;





  • add about 3/4 stick melted butter, coat cocoa puffs and press all over bottom of dish
    sprinkle liberally with Heath Toffee bits











  • put all of the cream cheese and sugar, corn starch, egg yolks and lemon juice into mixing bowl, blend well.








  • place egg whites , cream of tartar and Tbsp. sugar into deep bowl, whip until soft to firm peaks form.

    spoon whites over cheese mixture, gently fold together to incorporate well.

    pour all over crust in baking dish or [spring form pan if you choose].
    Top with more Heath Toffee bits. Bake at 350 degrees F for about 45 - 50 minutes, until knife inserted in center comes out clean.

    Cool completely and chill before serving.

    Kevin's Tasty Pork Tacos

    For Mother's Day, Kevin made his ultra tasty pork taco recipe he had made up. He had played around with some things we had and threw together this the last time, so this time we took some approximate measurement notes. It came out really yummy and good, tho we used a different tortilla shell which kinda ruined the overall flavor.

    This has become a favorite meal of mine. You can substitute pork with chicken or beef. I love this recipe so much I wanted to share it here. So please enjoy "Kevin's Tasty Pork Tacos". This recipe calls for a meat hammer, if you don't have one, you can tenderize your meat by placing in plastic wrap or between two thin flexible cutting boards and mashing with a rolling pin or equally heavy bludgeoning object. Good way to get rid of tension and aggression. Try to get the meat as flat as you can without it falling apart or anything.


    Kevin's Tasty Pork Tacos



  • 2 McCormick Taco Seasoning Packets
  • 2 tbsp. Butter/Margarine melted
  • 3 tbsp. (or more to taste) Sugar
  • splash or so of water for consistency
  • 2-3 lbs. Pork, Chicken or Beef Strip cuts with minimal fat

    1. Tenderize your meat using a meat hammer until it's real thin. Then cut into thin strips about ¼" thick. Slice off any fat and place in skillet to grease slightly, discard fat.
    2. In a medium bowl, empty about ¾'s of one packet of seasoning. Mix in meat until thoroughly coated. Place strips on skillet, in an even layer, do batches if your pan isn't big enough, you don't want meat to cook together or not get cooked evenly.
    3. In a small bowl, mix your melted butter, seasoning, and sugar until smooth. Add in enough water to get a fairly liquid consistency. If you add too much, it's okay, you can cook off the excess.
    4. Cook meat thoroughly then drizzle the mix over the meat, covering completely. Heat everything back up, stirring to keep from burning.
    5. Serve on tortilla shells (we prefer soft) with your favorite toppings, cheese, lettuce, tomato, etc. Enjoy!

    Grace's Recipes

    I always loved my little sister, Grace's Egg Drop Soup. I never knew her recipe. So I'm looking to try different ones to find my favorite. Here are a few variations, Asian Egg Drop Soup and Chinese Egg Drop Soup found at FoodNetwork.com. Today is the anniversary of her 27th year. And to celebrate, I'd like to share a few of her favorite recipes/foods. Though her favorite foods were Corn Nuts and burnt (to a char) Hot Dogs, she made the best Lasagna and Egg Drop Soup. I don't have her Lasagna recipe either, but Kevin's Mom has shared with me a great Crock Pot Lasagna recipe, that I'd also like to share here.

    Asian Egg Drop Soup



    • 4 cups prepared chicken stock, plus 2 tablespoons
    • 1/2 teaspoon grated fresh ginger
    • 1 tablespoon soy sauce
    • 1 tablespoon cornstarch
    • 2 eggs, lightly beaten
    • 2 green onions, chopped, including ends
    • Salt and white pepper, to taste

    1. Bring soup stock, grated ginger and soy sauce to a boil.
    2. In a small cup, make a slurry by combining the cornstarch and 2 tablespoons of chicken stock. Stir until dissolved.
    3. Slowly pour in the cornstarch mixture while stirring the stock, until thickened.
    4. Reduce heat to a simmer. Pour in the eggs slowly while stirring the soup in the same direction. The egg will spread and feather.
    5. Turn off the heat and add the green onions. Season with salt and pepper, and serve immediately


    Egg Drop Soup (China)


    • 6 cups reduced-sodium chicken broth
    • 6 to 8 large spinach leaves
    • 1/2 cup diagonally sliced green onions (about 4 small), divided
    • 4 shiitake mushrooms, stems removed, wiped clean, and thinly sliced
    • 1 teaspoon soy sauce
    • Pinch ground white pepper
    • 2 large eggs, lightly beaten

    1. In a medium saucepan or stockpot, bring the chicken broth to a simmer.
    2. Stack the spinach leaves on top of each other, and roll them up tightly. Thinly slice into ribbon-like strips. Add the spinach, 6 tablespoons of the sliced green onions, the mushrooms, soy sauce, and white pepper to the broth.
    3. When the broth begins to simmer again, gradually add the beaten eggs in a slow and steady stream.
    4. Use a fork or a chopstick to create shreds or ribbons with the eggs as they are stirred into the broth-this will shred the eggs into ribbons as they cook.
    5. Cook the soup for 1 minute more and remove from the heat. Ladle the soup into bowls and garnish with remaining 2 tablespoons of sliced green onions. Serve hot.


    Lazy Lasagna



    • 1lb Ground Beef, browned
    • 32oz jar of Spaghetti Sauce
    • 8oz bag Curly-edged (or broken lasgana)Noodles, cooked
    • 16oz Ricotta Cheese
    • 8oz Shredded Mozzarella Cheese
    • Parmesan Cheese to taste
    • Season to taste

    1. In a large bowl, combine Beef and sauce. In seperate bowl, combine noodles and cheeses (or just cheese if using lasagna noodles).
    2. Layer 1/3 of Beef mixture, followed by 1/2 of cheese mixture in crock pot. Repeat layering ending with beef mixture.
    3. Sprinkle with parmesan.
    4. Cook on low for 3-4 hours.

    Greek Lemon Rice Soup

    This is one of Kevin's all time favorite soups. So I'm always looking for variations to perfect it for him. He seems to like this recipe, though, he doesn't like it as leftover, reheated. I do. But best served hot. I definitely enjoy the tangy lemon, more lemon the better to me. I find this "Lemon Rice Soup" is best, if you let it thicken up so there's less broth and more rice to it. Kevin likes it with chicken cooked into it. This recipe is a good side with pretty much any dish, but best with chicken or a traditional Greek dish. I've been looking into Greek recipes to serve it with.


    Lemon Rice Soup

    • 6 cups chicken stock
    • 2 eggs
    • Juice of 1 lemon
    • 6 tbsp. uncooked rice
    • Salt
    • Cooked Chicken (optional)

    1. Bring the broth to a boil in a pot or large saucepan;
    2. Sprinkle in the rice and cook until tender;
    3. in a bowl, beat together the eggs and lemon juice; gradually blend in a ladleful of hot broth, stirring constantly;
    4. Reduce the heat to low;
    5. Gently pour the egg and lemon mixture into the soup, stirring all the while; leave for a few minutes to thicken, but don't let the mixture boil or it will break;
    6. Serve immediately.

    Tagliolini with Pesto and Almonds

    The Ligurians have a long tradition of adding greens to pasta seasoned with pesto sauce, and this tasty variation on their more strictly vegetarian fare gains considerable grace from crisp prosciutto flakes, which nicely contrast the oil and garlic.

    To serve 4:
    • 4/5 pound (400 g) fresh tagliolini or fettuccine
    • 2/3 pound (300 g) string beans
    • 2 ounces (60 g) lean prosciutto
    • 2 ounces (60 g) coarsely chopped almonds
    • A nice bunch of fresh basil
    • 1 clove garlic, peeled
    • 2 tablespoons freshly grated Parmigiano Reggiano or Grana Padano
    • 1/2 cup extravirgin olive oil
    • Salt and pepper to taste



    Procedure:
    Set pasta water to boil. In the meantime, about 2 ounces (60 g) of basil leaves and put them in a blender, with a scant half teaspoon salt, the garlic clove, and the cheese. Blend, adding the oil in a thin stream, until the mixture is creamy.
    Wash the string beans and blanch them for 2-3 minutes in lightly salted water. Drain them and run them under cold water to interrupt their cooking. Cut the larger ones in half, and then slit the halves lengthwise.
    Shred the prosciutto and sauté the pieces, without any additional oil, in a non-stick pan until they're crunchy. Remove them to a piece of absorbent paper with a slotted spoon. Add a tablespoon of oil to the pan and sauté the beans and almonds for a couple of minutes.
    Cook the pasta, and drain it while it's still a little al dente; turn the pasta into a serving bowl before it has stopped dripping completely, and season it, first with the pesto, followed by the string bean mixture. Mix well, garnish with the prosciutto, and serve at once, with a crips white wine along the lines of a Vermentino dei Colli di Luni. As a second course, roast fish and string beans seasoned with olive oil and lemon juice would be nice.

    Memorial Day Bake Sale

    I'm trying to help my Mother gather funds for her to move out to Indiana to be near myself and her grandson. She's fallen on troubled times and needs to expedite the moving process or else become homeless. So I'm having a bake sale on Monday, Memorial day and will transfer proceeds to her PayPal account. Her goal is around $1,000, so far she has only about $125 towards that from generous donations. At the bottom of this page there is a link to donate directly to her PayPal account if you would like to make a contribution. Any amount would help. My Mother is under a lot of stress right now, and any monetary relief would alleviate quite a bit of that.


    Here are the recipes I'll be using for my bake sale, I'll post up pictures later on. Our neighbor Jess will be helping with the sale, she's baking up a few things and will help watch Chase while we sell. Good thing is, we get to eat all the leftovers! ;P So even if we don't pool together much profit, it's not a total loss. I'm making "Crispy Peanut Butterscotch Fudge Squares", "Buckeye Candy", "Cake Balls", "Peanut Butter Pie", "No-Bake Chocolate Peanut Butter Fudgies", "Easy Chocolate Fudge", "Graham Cracker Cake W/Buttercream Frosting", "Chocolate Turtle Bars", and "Chocolate Caramel Crispy Cakes". I've already made a batch of Peanut Butter Fudge. Using 3 ¼ cups Brown Sugar instead of morsels, and milk instead of condensed milk and confectioners sugar instead of marshmallows, and of course Peanut Butter! I'll post recipe later if I can find it again. It's really sweet, cut into very small pieces so you don't go into sugar overload!














    Crispy Peanut Butterscotch Fudge Squares



    Crust
  • 4 ½ teaspoons light margarine
  • 2 cups miniature marshmallows
  • ¼ cup creamy peanut butter
  • 3 cups crisp rice cereal

    Fudge
  • 2 tablespoons light margarine
  • 2/3 cup (5 fl.-oz. can) Evaporated Fat Free Milk
  • 1 ½ cups granulated sugar
  • ¼ teaspoon salt
  • 2 cups miniature marshmallows
  • 1 cup Butterscotch Morsels
  • ¾ cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • ¼ cup cocktail peanuts, chopped


      Crust:
    1. Coat 13 x 9-inch baking pan and rubber spatula with nonstick cooking spray.
    2. Melt margarine over low heat in medium, heavy-duty saucepan. Add marshmallows and peanut butter; stir until melted. Remove from heat. Add cereal; stir until coated. Press onto bottom of prepared baking using prepared rubber spatula.


      Fudge:
    1. Combine margarine, evaporated milk, sugar and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.
    2. Add marshmallows, morsels, peanut butter and vanilla extract; stir vigorously for 1 minute or until marshmallows and morsels are completely melted. Pour over crust. Sprinkle nuts over fudge; press in slightly. Refrigerate until set. Cut into squares.





    Buckeye Candy



  • 2 cups creamy peanut butter
  • ¼ cup (½ stick) butter or margarine, softened
  • 3 ¾ cups (16-oz. box) powdered sugar
  • 2 cups (12-oz. pkg.) Semi-Sweet Chocolate Morsels


    1. Line baking sheets with wax paper.
    2. Beat peanut butter and butter in large mixer bowl until creamy. Beat in powdered sugar until mixture holds together and is moistened. Shape into 1-inch balls; place on prepared baking sheets. Freeze for 1 hour.
    3. Melt morsels and shortening in medium, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute; STIR. Morsels may retain some of their shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until melted.
    4. Dip peanut butter centers into melted chocolate using a toothpick, leaving a small portion of the center uncovered. Shake off excess chocolate and scrape bottom of candy on side of bowl. Return to baking sheets; refrigerate until chocolate is set. Store in covered container in refrigerator.





    Cake Balls



  • 1 (18.25 ounce) package chocolate cake mix (or any flavor)
  • 1 (16 ounce) container prepared chocolate frosting (any flavor)
  • 1 (3 ounce) bar chocolate


    1. Prepare the cake mix according to package directions using any of the recommended pan sizes. When cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended.
    2. Melt chocolate coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.
    3. Use a melon baller or small scoop to form balls of the chocolate cake mixture. Dip the balls in chocolate using a toothpick or fork to hold them. Place on waxed paper to set.

    Tips:

    1. Crumble the cake right after it came out of the oven, so it was still quite hot, but that makes it really stick together.
    2. Also make sure you crumble it into tiny crumbs. Big chunks the ball won't form as well.
    3. Freeze the balls solid before dipping.





    Peanut Butter Pie



  • 1 cup of jif crunchy peanut butter
  • 1 (8 ounce) package Philadelphia Cream cheese
  • 12 ounces Cool Whip
  • 2 cups powdered sugar
  • 2 (9 inch) pre-prepared graham cracker pie crusts (I'm using Oreo crusts, yum!)


    1. Mix peanut butter, cream cheese, cool whip, and powdered sugar together and pour into 2 graham cracker crusts and freeze.
    2. Store in freezer.





    No-Bake Chocolate Peanut Butter Fudgies



  • 4 cups sugar
  • 4 ounces unsweetened chocolate
  • 1 cup full-fat milk
  • 1 cup butter
  • 1 pinch salt
  • 1 cup smooth peanut butter
  • 1 (18 ounce) container quaker quick oat
  • 2 ½ teaspoons vanilla


    1. Bring the sugar, chocolate, milk, butter and salt to a boil in a heavy large saucepan, stirring constantly; simmer for 2 minutes, then remove from the heat.
    2. Stir in the peanut butter, oats and vanilla (mix fast but completely!).
    3. Drop from a teaspoon or tablespoon onto a baking sheet.
    4. Let sit for 30 minutes at room temperature before serving.





    Easy Chocolate Fudge



  • 1 ½ cups semi-sweet chocolate chips
  • 1 ½ cups milk chocolate chips
  • 1 (14 ounce) can sweetened condensed milk
  • ¼ cup butter (no substitutes)
  • 1 teaspoon vanilla
  • 1 cup chopped walnut or pecan
  • 1 cup mini marshmallows (optional)


    1. In a large microwave-safe bowl place both semi-sweet chocolate chips, milk chocolate chips, condensed milk and butter; microwave on MEDIUM for 3-5 minutes, removing and stirring once or twice during the cooking time (do not overcook or the mixture will turn grainy).
    2. At this point mix in the c (if using) until completely combined.
    3. Stir in vanilla and nuts until combined.
    4. Transfer into greased 8 x 8-inch baking dish. Chill in fridge.





    Graham Cracker Cake W/Buttercream Frosting



    Graham Cracker Cake

  • 1 (18 ¼ ounce) package white cake mix1 (18 1/4 ounce) package white cake mix
  • 1 ¼ cups graham cracker crumbs
  • 2 tablespoons sugar
  • 1 ½ cups water
  • 2 egg white
  • ¾ cup walnut, chopped (I'm using pecans)

    Buttercream Frosting

  • 1 cup butter, softened well
  • 8 cups confectioners' sugar
  • ½ cup whole milk (or half & half)
  • 2 teaspoons vanilla


    1. Combine cake mix, graham cracker crumbs, sugar, water and egg whites in a large mixing bowl.
    2. Blend on medium speed for 3-5 minutes with electric mixer.
    3. Stir in nuts by hand.
    4. Spray 2 9 inch round cake pans with Bakers Joy & pour in the cake batter.
    5. Bake at 350 degrees for 35-45 minutes.
    6. Frost only when completely cool.





    Chocolate Turtle Bars



  • 1 (8 ounce) can crescent roll
  • 2/3 cup brown sugar
  • 1 (12 ounce) package chocolate chips
  • 2/3 cup butter
  • 1 ½ cups pecan halves


    1. Pat crescent rolls into ungreased 9 x 13 pan.
    2. Boil brown sugarand butter for 1 minute in sauce pan then pour over raw dough.
    3. Spinkle with nuts. Bake for 15 mins at 375 degrees.
    4. Then sprinkle with chocolate chips and spread when melted. Cool and cut.





    Chocolate Caramel Crispy Cakes



  • 4 (2 ounce) chocolate candy bars (recommended — Mars Bars or Milky Way)
  • ¼ cup unsalted butter
  • 2 ½ cups crunchy cereal (recommended — Cornflakes, but I'm using Rice Krispies)


    1. Break the candy bars into bits and drop them into a saucepan.
    2. Add the butter and melt, over lowish heat, stirring frequently with a rubber spatula.
    3. When everything is melted (the nougat-like layer takes the longest to go), tip in the cereal and turn them, with your rubber spatula, in the chocolate mixture until they are all pretty well coated.
    4. Fill the mini muffin papers with the mixture and put in the refrigerator, on a small sheet pan or tray, for at least 1 hour.

    Grandma Grace's Easter Ham

    When we were growing up, Mom used to always make the Easter dinner, Dad made Thanksgiving Dinner. Both meals were eagerly anticipated. The table would be set with our best table cloth, cloth napkins, bowls with olives and tiny gherkin pickles and fancy cruets for salad dressings. We ate big on holidays.


    We also found time for quick visits to all of our grandparents homes, displaying our finest frilly dresses [girls] and white gloves, pattent leather shoes... the boys wore suits and bow ties.





    Grandma Grace's Easter Ham




  • Boneless ham
  • 1 small can pineapple slices [reserve juice]
  • 1 stick butter
  • 1 cup dark brown sugar
  • 3 Tablespoons yellow mustard
  • 1 Tablespoon vinegar
  • several whole cloves
  • 1 teaspoon ground cloves


    1. Place the ham in a large baking pan and score the top of it with a knife, so that it has criss-cross marks on it. lay slices of pineapple all across the top, secure them in place with whole cloves.

      in a small sauce pan, melt butter and add brown sugar, mustard, vinegar, juice from pineapple and ground cloves. Simmer on low heat blending well. Pour some of the mixture over the ham, place ham in pre-heated oven 375 degrees F.
    2. continue simmering remaining glaze on top of stove, and spoon more of it over ham every 20 - 30 minutes until ham is done. [ham cooking time varies due to size]
    3. Serve with baked sweet potatoes, asparagus and salad.

  • Leftovers Chicken Taco Soup

    Sometimes near the end of the month, we begin to wonder... "How can I make a meal out of what we have here?" Here is what I came up with today, it's good enough to eat. Use a BIG spoon.




    "What's in the cupboard" Chicken Taco soup



  • 1 can Progresso vegetarian vegetable soup
  • 1 12.5 ounce can cooked chicken [or cold leftover chicken without bones]
  • 1 can tomato bisque soup
  • 1 can garbanzo beans [undrained]
  • 1 small can dark red kidney beans [undrained]
  • 1 envelope taco seasoning mix
  • any cold leftover veggies from the frig
  • 1 dash tabasco sauce


    1. place all ingredients in a large pot and heat well.
    2. Serve with tortilla chips or fritos corn chips.

    Sue Bee's Honey &
    Lavender Ice Cream

    I got this recipe from Aunt Sue, formerly known as Sue Bee Honey or Shih Tzu. Bwahahaha, no one really called her that, but it was fun to say "Shit, Sue" to her... She's Sue Gardner now, So Sue "G" Honey, though Gardeners do have bees in their gardens. This recipe will require an ice cream maker, or creativity. I heard you can use two different sized coffee cans, one that can fit inside of the other, put mix in inner can and ice and rock salt in outer can and roll on the floor back and forth forever.

    Sue Bee's Honey &
    Lavender Ice Cream



  • 2 cups Milk
  • ¼ cup Honey
  • ¼ cup Lavender
  • ¼ cup Sugar or Honey (separate from previous)
  • 1 cup Heavy Cream
  • 1 tsp Vanilla
  • 5 egg yolks

    1. Combine the first three ingredients in a saucepan. Simmer for 5 minutes and let steep for up to 5 minutes longer. Strain thoroughly through a sieve.
    2. Return the milk mixture to the sauce pan and add 1/4 cup of sugar or honey, 1 cup of heavy cream, 1 tsp of vanilla and 5 egg yolks.
    3. Simmer while stirring for 5 minutes. Mix will start to thicken like custard, remove from heat and cool.
    4. Pour into the ice cream maker. Add ice and rock salt to outer area and crank until frozen. lasts up to a month in the freezer.

    Gene gave me a number of random pages of notes written by Grandma, thinking they might relate to a book she was writing, but he was mistaken. Most of them are menus, lists of things to do, gardening notes etc. These 2 recipes were in that bundle, "Cream Salad Dressing" & "Lemon Pie", marked "Mon. 5/20/85 these recipes to Dave & Jean, also; photostat of genealogy chart."

    Cream Salad Dressing



  • 1 raw egg/separated
  • 2 Tablespoons butter
  • 1 pint cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon Cayenne pepper
  • 1/8 teaspoon dry mustard
  • 2 Tablespoons flour
  • 1 Tablespoon sugar
  • 1/4 cup vinegar

    mix dry ingredients. add to butter melted in top of double boiler. Stir and cook briefly. Slightly beat egg yolk and mix into cream. Add to pan and cook until slightly thickened, stirring constantly. Remove from heat. If lumpy, beat with electric mixer to remove lumps. Add Vinegar. If it seems too bland, an additional 2 Tablespoons vinegar may be added to taste. Keep refrigerated.

    Lemon Pie



  • 2 eggs
  • 1 cup sugar
  • juice of 2 lemons
  • grated rind of 1 lemon
  • 1/2 cup cornstarch
  • 1 1/2 cups boiling water
  • 2 Tablespoons butter
  • 1 baked pie crust

    Separate eggs, reserving white for meringue. In top of double boiler pan, heat egg yolks and cream in the sugar. Add lemon juice and grated rind.Add cornstarch that has been softened with cold water. [she never mentions how much cold water]. Add boiling water. Cook and stir in top boiler until thick and shiny. Remove top pan from heat and allow to cool. Pour into cooked pie shell and top with meringue.

    Meringue
    Beat the 2 reserved egg whites until stiff but not dry. Gradually add and beat in 8 Tablespoons one tablespoons at a time. Cover filled pie with meringue.Carefully spread across entire pie and out to crust edges then place in oven @ 275 degrees F
    until lightly browned.

    My Shepherd's Pie

    Just a little something I'm whipping up real quick like. I'm kinda just throwing it together. It's pretty much your basic recipe, only adding pancake mix to the mashed potatoes and using chicken broth instead of milk. Currently, Kevin and I are trying a low/no dairy diet, as we seem to have an intolerance for lactose. I also like using powdered sauce mixes as they are easy and very cheap. A great way to make a real meal with low hassle. I hope you enjoy my simple "Shepherd's Pie" recipe. Cougar first introduced me to Shepherd's Pie. And I loved it. I don't know what her recipe is, but I'm just sort of making this up as I go. So hopefully, it turns out right. Kevin is my guinea pig. ;P Trying to start some new traditions of family recipes, for my new family. I feel like a domestic goddess. Been cooking dinner EVERY day almost. Wow. Really. And it's been somewhat healthy food! Lol! Not just instant this and microwave that. But REAL food. I'm starting to feel like a real mom. And since Chase is starting to eat big people's food, this is very cool.

    Shepherd's Pie



  • 2-3 lbs. Ground Beef
  • 1 Chopped Onion (optional, use any vegetable desired or omit)
  • 2-3 large Potatoes, peeled (I'm using a mix of red potatoes and baking, and leaving skin on)
  • 1 can Chicken Broth
  • 1 stick Butter/Margarine
  • 1 cu. Pancake Mix
  • Gravy (sauce mix, I'm using an Au Jus mix)

    1. Preheat oven to 350°.
    2. Boil Potatoes, drain then mash. Add Chicken Broth and Butter and Pancake Mix until desired consistency.
    3. Brown Ground Beef, drain grease. Add Onion and Gravy Mix, and follow directions for mix.
    4. In a glass 13x9 pan or two 9" pie pans, make a layer of cooked Ground Beef, top with layer of mashed Potato mixture.
    5. Bake at 350° for approx. 35-45 minutes, until top is golden. Best served warm.


    I plan to serve this with Roasted Carrot Spread on French Bread slices. I'm going to cook it up before bed, but eat it for breakfast when I get up. Maybe Kevin will get some before he goes to work, if I get up early enough to make him eat. Otherwise, he'll get it when he gets home. Time for me to get cooking.

    This is so ultra the yummy! Wow, really. The pancake mix (I used Hungry Jack: Buttermilk) gives it a slight sweetness that is the perfect complement with the meat and potatoes and the Au Jus gravy. I didn't add as much water to the gravy, I only used 1 cup, when it called for three. Absolutely delicious. And the Roasted Carrot Spread went with it splendidly. Though it's preparation/cook time took longer than supposed. I roasted it for nearly 2 hours before the carrots were soft enough. I should've cut them down smaller, I suppose. But I followed the directions to a tee. But it was delicious! They have a slight sweetness to them as well, the garlic with the carrots. I rounded off my meal with a slice of Grandma Pat's Apple Pie and a glass of apple cider. I'll see if Grandma Pat will share that recipe. I've invited Great Aunt Dee and Aunt Pat to post recipes here. I would like to see more Clinton recipes posted. This is easy and cheap to make, definitely give it a try!

    Ginny's never fail fudge

    Ginny's "Never Fails" Fudge



  • 3 cups sugar
  • ½ cup margarine or butter
  • 1/3 cup milk
  • 3 squares unsweetened chocolate [3 ounces]
  • ¼ teaspoon salt
    last ingredient;
  • 5 ounces [½ bag] miniature marshmallows

    1. Combine above ingredients and bring to full boil in 2 quart saucepan, stirring constantly.
    2. Lower heat to medium high, continue boiling 5 minutes [while stirring].
      When 1 minute is left, Add 5 ounces [½ bag] miniature marshmallows, stirring well for the remaining minute.
      Mixture will become very fluffy.
    3. When time is up; remove from heat, add 1 teaspoon vannilla extract and beat at high with electric mixer until very thick. Cool in a buttered dish 5 minutes or more.
    4. Cut into small squares and serve.

    Roasted Carrot and Herb Spread

    I found this little spread/dip recipe at Eat Better America. It only takes about 10 mins prep time, then leave alone in the oven and then a whirr in the processor. Easy recipe for a mom with a complaining baby in a highchair. How I would love to finish all the dishes in one go.... Here it is: "Roasted Carrot Spread".

    Roasted Carrot Spread


  • 2 lb Baby Carrots
  • 1 large Sweet Potato, peeled, cut into 1-inch pieces
  • 1 Onion, cut into 8 wedges, separated
  • 3 tbsp. Olive Oil
  • 1 tsp. dried Thyme leaves
  • 2 Cloves Garlic, finely chopped
  • ¾ tsp. Salt
  • ¼ tsp. Ground Pepper
  • 2 loaves French Baguette Bread, each cut into 30 slices

    1. Heat oven to 350°F. Spray 15x10x1-inch pan with cooking spray. Place carrots, sweet potato and onion in pan. Drizzle with oil. Sprinkle with thyme, garlic, salt and pepper. Stir to coat.
    2. Roast uncovered 35 to 45 minutes, stirring occasionally, until vegetables are tender.
    3. In food processor, place vegetable mixture. Cover; process until blended. Spoon into serving bowl. Serve warm, or cover and refrigerate until serving. Serve with baguette slices.

    This is so incredibly yummy! A must try, really. I made it with My Shepherd Pie, a perfect compliment. This spread is surprisingly sweet. The carrots with the garlic and sweet potato blend together so exquisitely. You will love this. And it's such a healthy spread, too. Perfect for parties, or just spreading on some wheat thins for healthy snacking.

    The Great Pumpkin

    It's pumpkin time! Randy has a ton of pumpkins this year. We've given many away, but there's still plenty to carve up and plenty more for eating! So, I've listed here a few of my favorite pumpkin recipes. I've just made another variation of Amish Friendship Bread, this time using pumpkin, of course. Just cooked it up today, and it was superb. I'll upload a picture later. My pumpkin favorites are: Pumpkin Soup, Pumpkin Donuts, Pumpkin Bread, and Pumpkin Pie.

    Savory Pumpkin Soup


  • 4 Medium Cloves Garlic, unpeeled
  • 6 cu. peeled, deseeded Pumpkin
  • 3 tsp. Oil
  • 1 lg. Onion, finely chopped
  • ½ tsp. Ground Nutmeg
  • 1 tsp Ground Cumin
  • Salt and Pepper, to taste
  • 4 cu. Vegetable or Chicken Stock
  • Cream, for serving
  • Ground Nutmeg, for serving

    1. Preheat oven to 375°.
    2. Chop pumpkin into even-sized pieces (larger pieces will require a longer roasting time). Place pumpkin and unpeeled garlic cloves in a baking tray/dish, drizzle with two teaspoons of the oil and toss to coat with oil.
    3. Bake for 20 minutes, then remove the garlic so that it doesn't overcook. Continue baking pumpkin until tender and cooked through.
    4. Heat remaining teaspoon of oil in large saucepan over medium heat. Add onion, nutmeg, cumin, salt and pepper. Cook, stirring, for one minute.
    5. Add pumpkin and stock and bring to the boil. Reduce heat and simmer until onion is soft and stock has reduced, about 20 minutes. The more the stock reduces, the thicker the soup will be.
    6. Peel roasted garlic and add to saucepan. We allow the soup to cool for about half an hour before pureeing in batches in a blender. Be careful if pureeing the soup while it is still very hot.
    7. Serve the soup hot. Top with a drizzle of cream and a sprinkle of nutmeg, if desired.


    Store soup in an airtight container in the refrigerator or freezer.

    I've just made this soup tonight. I made only one serving to try it out. Using the leftover pumpkin from my "Cat & Moon" jack-o-lantern, I just tossed in the oven with some pumpkin seeds and garlic cloves. Sprinkled on the olive oil, then after I was done feeding Chase, I took out the garlic and the seeds and put the pumpkin back in for another 30 or so minutes while I fed Chase again. Then I went to check on the pumpkin, and it was tender enough to cut with a spatula, so I took it out. I then put a can of chicken stock on the stove and threw in the skinned pumpkin while Chase played in the exersaucer. After it came to a light boil, I tossed in the roasted garlic and let it boil for a few minutes before turning off the heat to let it cool. About this time, Chase was done in the exersaucer, he wanted to play. So I watched the season premiere of "Heroes" on NBC. When the show was over, Chase was ready to eat and take his nap. So I laid him down and went back to the kitchen with the baby monitor on. A quick whirr in the food processor and then reheating for a minute in the microwave and my soup was done. I seasoned it a little differently, added some Cajun seasoning, and omitted the onion (didn't feel like cutting and peeling and all that). Mmmmm, was this soup ever yummy. And with a batch of toasted and lightly salted pumpkin seeds to set it off. Definitely a very good low maintenance meal to make for breastfeeding moms who can't cook in the kitchen for more than 15 minutes at a time. The roasted garlic is superb. I want to eat it on everything. Tomorrow I plan to make the pumpkin pie. We'll see.


    Not-Mom's Pumpkin Donuts



    Spiced sugar:
  • 1 cu. sugar
  • 4 tsp. ground cinnamon
  • 2 tsp. ground nutmeg

    1. Mix all ingredients in medium bowl to blend.


    Dounuts:
  • 3 ½ cu. All Purpose Flour
  • 4 tsp. Baking Powder
  • 1 tsp. Salt
  • 1 tsp. Ground Cinnamon
  • ½ tsp. Ground Ginger
  • ½ tsp. Baking Soda
  • ¼ tsp. Ground Nutmeg
  • 1/8 tsp. Ground Cloves
  • 1 cu. Sugar
  • 3 tbsp. unsalted Butter, room temperature
  • 1 large Egg
  • 2 large Egg Yolks
  • 1 tsp. Vanilla Extract
  • ½ cup plus 1 tablespoon buttermilk
  • 1 cup canned pure pumpkin
  • Canola oil (for deep-frying)

    1. Whisk first 8 ingredients in medium bowl to blend. Using electric mixer, beat sugar and butter in large bowl until blended (mixture will be grainy). Beat in egg, then yolks and vanilla. Gradually beat in buttermilk; beat in pumpkin in 4 additions. Using rubber spatula, fold in dry ingredients in 4 additions, blending gently after each addition. Cover with plastic; chill 3 hours.
    2. Sprinkle 2 rimmed baking sheets lightly with flour. Press out 1/3 of dough on floured surface to 1/2- to 2/3-inch thickness. Using 2 1/2-inch-diameter round cutter, cut out dough rounds. Arrange on sheets. Repeat with remaining dough in 2 more batches. Gather dough scraps. Press out dough and cut out more dough rounds until all dough is used.
    3. Using 1-inch-diameter round cutter, cut out center of each dough round to make donuts and donut holes.
    4. Line 2 baking sheets with several layers of paper towels. Pour oil into large deep skillet to depth of 1 1/2 inches. Attach deep-fry thermometer and heat oil to 365°F to 370°F. Fry donut holes in 2 batches until golden brown, turning occasionally, about 2 minutes. Using slotted spoon, transfer to paper towels to drain. Fry donuts, 3 or 4 at a time, until golden brown, adjusting heat to maintain temperature, about 1 minute per side. Using slotted spoon, transfer donuts to paper towels to drain. Cool completely.


    Powdered Sugar Glaze:
  • 2 cu. powdered sugar
  • Whipping cream

    For powdered sugar glaze:
    Whisk powdered sugar and 4 tablespoons whipping cream to blend. Whisk in additional cream, 1 teaspoon at a time, to form medium thick glaze. Can be made up to 3 hours ahead. Add donut holes to bowl of spiced sugar and toss to coat. Spread donuts on 1 side with Powdered Sugar Glaze. Arrange donuts, glazed side up, on racks. Let stand until glaze sets, at least 30 minutes.

    Makes about 24 donuts and 24 donut holes.


    Amish Pumpkin Bread


    Using the Amish Friendship Bread recipe, I added pureed Pumpkin, used Pumpkin Pie Spice instead of cinnamon, and used ½ cu. Brown Sugar & ½ cu. Sugar instead of 1 cu. Sugar.


    The Best Pumpkin Pie


  • Unbaked Pie Crust
  • ¾ cu. granulated sugar
  • 1 tsp. ground cinnamon
  • ½ tsp. salt
  • ½ tsp. ground ginger
  • ¼ tsp. ground cloves
  • 2 large eggs
  • 3 cu. Pureed Pumpkin (or 1 can 15 oz.)
  • 1 can (12 fl. oz.) Evaporated Milk
  • Whipped cream (optional)

    1. Preheat the oven to 425°. Mix the sugar, cinnamon, salt, ginger and cloves (or use 1 ¾ tsp. Pumpkin Pie Spice) in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.
    2. Pour mixture into pie shell.
    3. Bake in preheated 425° oven for 15 minutes. Reduce temperature to 350°; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.

    Don't freeze as this will cause the pie filling to separate from crust.

    As a note... Make sure to drain your pureed pumpkin. My pie ended up kinda squishy. Still tasty.

    Variations on Friendship Bread

    I've been trying to experiment on different bread recipes for the Amish Bread Starter. If you've made it, then you've got a nice little yeast farm going on and need to do a lot of baking. Remember that you can freeze it and restart the process. So, here's what I've been cooking up. Banana Bread, Lemon Bread, Lemon/Raspberry Swirl Bread, and Sourdough Pizza.

    Banana Apple


    Add to Basic Recipe:


  • Mashed Banana
  • use ½ cu. oil and ½ cu. Apple Sauce
  • additional ½ cu. Apple Sauce

    Follow same cooking directions.




    Again using the Basic Recipe, make the following changes and additions. Follow same cooking directions. Except grease two pans and coat with confectioner's sugar. While bread is still warm, spread icing on top.


    Lemon & Cranberry



  • subtract Cinnamon & Vanilla Extract
  • juice from ½ a Lemon
  • substitute Lemon Pudding instead of Vanilla
  • 1 cu. Dried Cranberries (optional)

    Icing:
  • additional ½ Lemon Juice
  • Confectioners Sugar (enough to thicken it, I didn't measure)




    Lemon & Raspberry Swirl



    Same as above, however, no cranberries. Instead, take 1 cup of the batter and mix in a box of Raspberry Pudding in a separate bowl. Then put the main batter into two greased and coated pans. Then drop ½ the raspberry batter on top of each by the spoonful. Gently swirl the raspberry into the lemon batter with a knife. For the Icing, use melted White Chocolate Chips mixed with the fresh squeezed lemon juice. Spread Icing over bread while it's still warm so it glazes over.




    Sweet Sourdough Pizza


    (not yet tried)

  • 1 cu. Starter
  • 3 cu. Flour (keep in mind that measurements are approximate... this recipe has not yet been tried)
  • 1 tsp. Salt

    Sift flour and salt into a large bowl; pour in yeast mixture and beat until a stiff dough is formed. Turn dough out onto a floured surface; knead about 5 minutes, or until smooth and elastic. Add extra flour as necessary to keep from sticking to hands and board.

    Place in a large bowl greased with shortening; turn dough over to coat the other side with shortening. Cover with towel; let rise in a warm place, away from drafts, for about 30 minutes. Dough will be double in bulk. Punch dough down and divide in half. Grease two 14-inch pizza pans and grease hands lightly. Place half the dough in each pan and stretch to fit bottom and up sides of pan. Keep dough slightly thick around the edges. Fill with favorite filling and toppings and bake according to pizza recipe directions, or about 15 to 20 minutes at 425°.

    Okay, I've now tried this dough. And I didn't do it quite right. I had the starter in the fridge for a couple of days, and then didn't let it warm up to room temperature on it's own. I gave it a warm water bath. I think I must've killed it because my dough didn't rise. I think I should've used maybe 2 cups or a cup and a half of starter... Try, try, try again. I used my dough anyway to make a white pizza. It was delicious, though I think it needed more garlic and a bit of butter too. So, I'll adjust that recipe as well. The consistency of the dough came out right, so it probably was the right amount of starter. Maybe next time.

    White Spinach Pizza



  • 2 cloves minced Garlic
  • 1 tbsp. Olive Oil
  • ½ a stick of Butter, softened
  • 1 pkg. shredded Mozzarella
  • ½ pkg. shredded Parmesan
  • 1 pkg. chopped Spinach (thawed)
  • 2 tbsp. ground Basil

    Spread Olive Oil, Butter and Garlic over entire pizza shell. Mix cheeses and spinach and basil in bowl then spread over pizza. Season crust to your preferences.



  • This recipe was featured on Yahoo! Food, and I thought I ought to steal it. It sounds pretty tasty. I might try cooking it up the next time I get a chance to do some real cooking.

  • 1 tbsp. Dijon mustard
  • 1 tbsp. extra-virgin olive oil
  • ½ tsp. chopped thyme
  • 4 (6 oz) skinless, boneless chicken breast halves
  • Salt and freshly grnd. pepper
  • ½ cu. freshly grated Parmesan cheese
  • 4 cu. packed arugula leaves
  • 1 cu. cherry tomatoes, halved

    1. Preheat the oven to 475 degrees F. In a small bowl, combine 2 teaspoons of the mustard with 2 teaspoons of the olive oil and the thyme. Season the chicken breasts with salt and pepper, then brush them all over with the mustard mixture. Pat 2 tablespoons of the Parmesan all over each breast. Transfer the chicken breasts to a rimmed baking sheet. Bake the chicken on the top shelf of the oven for about 15 minutes, or until just cooked through and nicely browned.

    2. Meanwhile, in a medium bowl, combine the remaining 1 teaspoon each of mustard and olive oil; stir in 1/2 teaspoon of water. Add the arugula and tomatoes, season with salt and pepper and toss well. Spoon the salad onto plates, top with the chicken and serve.

    Mom's Imitation Crab Cakes a.k.a. Zucchini Latkes

    Now these are one of my favorites. They aren't crab cakes at all. Instead, it's zucchini. Gives it the right texture and a great vegetarian dish. Well, except that there's eggs, so it's not a vegan dish. I tried making some recently, but forgot to pat the grated zucchini dry, so they were kinda soggy. So don't forget to do that.

  • 1 large Grated Zucchini (patted dry)
  • 2 Eggs
  • 1 cu. Bread Crumbs (I like to use Progresso Italian Seasoned), or more to desired consistency
  • 1 tbsp. (or more, season to taste) Old Bay Seasoning (or other seafood spice)

    In a large bowl combine all ingredients and make into patties. Fry 'em up. Simple as that. And very yummy. You can deep fry, pan fry or put them in the oven with oil on top. The least fatty way might be to bake with non-stick spray, but who wants least fatty? Serve with your favorite seafood sauce, I like to use ketchup.

    Amish Friendship Bread Starter

    I'm helping GreatGrandma Pat make some Amish Friendship Bread. They didn't know how to make the starter. It's supposed to be an Amish secret. But I cheated, I looked it up online. I figured, either some Amish person told, or perhaps someone just figured it out. It's not rocket science after all. It's bread. This recipe takes 10 days to prepare. There are some variations to it as well. This is how it works, the yeast ferments and causes the batter to double. After the starter recipe is complete, you divide it into four 1 cup portions, keeping one for yourself to make again, and passing on the others to three friends, and the remainder in your bowl is enough to make two loafs.


    Amish Friendship Bread Starter



    Do NOT use metal bowls or utensils!!
    Do NOT refrigerate
    (if using a ziploc, burp the bag by allowing air to escape)

  • 1 (.25 ounce) package active dry yeast
  • ¼ cup warm water (110° F/45° C)
  • 3 cups all-purpose flour, divided
  • 3 cups white sugar, divided
  • 3 cups milk

    Directions:

    1. Day 1; (for starter)In a small bowl, dissolve yeast in water. Let stand 10 minutes. In a 2 quart container glass, plastic or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly or flour will lump when milk is added. Slowly stir in 1 cup milk and dissolved yeast mixture. Cover loosely and let stand until bubbly (or put in 1-gallon plastic bag and leave on counter). Consider this day 1 of the 10 day cycle. Leave loosely covered at room temperature. (for premade starter)Put bag/container on a countertop. Do Not refrigerate.

    2. Days 2 thru 4; stir starter with a spoon. (or squeeze the bag)

    3. Day 5; stir in 1 cup flour, 1 cup sugar and 1 cup milk.

    4. Days 6 thru 9; stir only. (or squeeze the bag)

    5. Day 10; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Separate batters of 1 cup each into four containers (1-gallon plastic bags)to give to friends along with this recipe, and your favorite Amish Bread recipe, keep one for yourself to start the recipe over again. Store your 1 cup starter in the refrigerator, or begin the 10 day process over again (beginning with step 2). Use the remaining batter to make your first bread. (I have a Bread recipe to continue this, but you can use a different one)




    Once you have made the starter, you will consider it Day One, and thus ignore step 1 in this recipe and proceed with step 2. You can also freeze this starter in 1 cup measures for later use. Frozen starter will take at least 3 hours at room temperature to thaw before using.




    Cinnamon Amish Friendship Bread



    Preheat oven to 325° and add the following ingredients to your remaining batter:

  • 3 Eggs
  • 1 cu. Oil (lowfat: ½ cu oil, ½ cu applesauce)
  • ½ cu. Milk
  • 1 cu. Sugar
  • 2 tsp. Ground Cinnamon
  • ½ tsp. Vanilla
  • ½ tsp. Baking Soda
  • ½ tsp. Baking Powder
  • ½ tsp. Salt
  • 2 cu. All Purpose Flour
  • 1 box Large Vanilla Pudding Mix

    1. Smooth batter with mixer.
    2. Grease 2 medium loaf pans and coat sides with a mixture on 1½ tsp Ground Cinnamon and ½ cu. Sugar.
    3. Pour batter evenly in both pans.
    4. Sprinkle remaining sugar mixture on top and Bake for 1 hour at 325°.


    If you keep a starter for yourself, you will be baking every 10 days and giving out more starters each time. Give your friends a copy of the recipe starting them at Day one (if given same day). They won't need the start portion. The recipe should just keep going so long as everyone keeps making more.
